Eggs and Cheese Stuffed Meatballs


2 pounds (1 kg) minced meat(beef and pork mix)
1 big onion
2 eggs (hard boiled and grated)
1 egg beaten
2 tablespoons milk
½ cup breadcrumbs
1 oz (50 g) soft cheese (grated)
1 1/2 teaspoon salt
1/3 teaspoon black pepper
1/2 teaspoon nutmeg
1 teaspoon dry herbs mix (basil, parsley, dill)


1-Dice the onion and mix it with the meat in a big bowl. Set aside.

2-Combine the breadcrumbs with the milk and let them soak for a few minutes.

3-Add this into the meat and onion mixture along with one beaten egg.

4-Season with the pepper, nutmeg, salt and dried seasonings.

5-To get tender meatballs, gently beat the meat mixture against the bowl walls until it gets smooth and sticky.

6-Mix the grated eggs and cheese in a small bowl.
7-Preheat oven to 350ºF (180ºC).

8-Wet your hands and form medium-size balls (2-3 inches in diameter). Set them in a greased roasting tin while you roll all of  the meat into meatballs.

9-Then make a hole in every meatball.

10-Put teaspoon of the cheese-and-egg mixture into the hole and pinch the meat around the filling with your fingers to close.

11-Cover the roasting tin with foil and put it into the preheated oven to cook the stuffed meatballs for 45 minutes at 350ºF (180ºC).
