spinach pie

will need few things .

For the dough: 
1 -) 500 g flour 
2 -) 90 ml virgin olive oil 
3 -) 50 ml apple cider vinegar with warm water
4 -) 2 teaspoons salt. Enjoy !!!

12 oz of boiled spinach

12 oz ricotta 

1 egg

3 oz of grated Parmesan

salt and pepper and bread crumbs 

Let’s get started

First place all dough ingredients in a stand mixer. Using the dough hook, knead until the dough is smooth and combined . Then wrap in plastic while you make the filling.

So to create the filling you need to mix the spinach with the ricotta. Next step is to add the egg . Parmesan and salt and pepper. Mix all well. Set aside briefly.

Unwrap your dough from the plastic and divide it into two equal parts. With a rolling pin, roll out each dough ball to create two circles 30 cm in diameter each.

On the first circle sprinkle breadcrumbs over top to help absorb the moisture of the filling and to keep the dough dry. Then put the filling on the same circle .

Next thing you need to do is to place one large dollop at the center of the circle and spread the remainder in a ring around the dough. Such as at the pictures below.

Sprinkle the filling with Parmesan. Take the second circle of dough and cover everything up. Seal the edges with your hands and then use a fork to press.

After that press a small bowl in the middle of the pie and press lightly to make an indentation. Then cut the dough into pieces such as the pictures below. You can make the pieces approximately 2 cm thick. And twist each slice .

At the end bake the pie at 180 °C for 30 minutes or until golden.
